Easy Weeknight Dinner: Greek Bowls

After a weekend of Hibachi & Popcorn, I needed something fresh for dinner. That combined with my constant desire for hummus had me running round Trader Joe’s for Greek Bowl ingredients. My concoction was in no way, shape, or form close to Yafo’s but it hit the spot Monday after work.


What You’ll Need:

Trader Joe’s Flaffel – in the frozen section

Arugula Blend (if Arugula isn’t your thing, chop up some Romaine!)

Cherry Tomatoes, Halved

1/2 Cucumber, Diced

Kalamata Olives, Halved

Slivered Almonds


Feta Cheese

Combine all ingredients.

Is that it? Yep, thats it. Want more? Add banana peppers, salt, pepper, and red wine vinegar. Serve with pita bread or pita chips.
