Easy Weeknight Dinner: Crunchy Chopped Detox Salad

As my promise to feature more recipes in 2017, my first will be for this delicious detox salad. I know what you are probably thinking – “seriously? a salad?” but y’all this was the perfect post holidays meal. After indulging for a good two weeks, I needed something fresh, light, and healthy to get me back on track. I found the recipe via a favorite blogger of mine, Designer Bags & Dirty Diapers. This salad has so much in it that every bite tastes different and the dressing is the best part!

Impatients beware – this salad does take a lot of chopping so give yourself ample time (and patience) to get it all done.


1 Head of Romaine – Chopped Finely

1 Small Bunch Kale – Chopped Finely (I used Trader Joe’s Kale Mix with Cabbage & Brussels Sprouts in order to eliminate some chopping)

1 Cup Carrots – Chopped

1 Cup Celery – Chopped

1/2 Pint Cherry Tomatoes – Chopped

1/2 Red Onion – Diced Finely

1/2 Cucumber – Diced Finely

1/2 Cup Slivered Almonds (Trader Joe’s has the best!)

1 Can Chickpeas


1/4 Cup Apple Cider Vinegar

1/3 Cup Olive Oil

1 Garlic Clove – Minced (I use pre-minced jarred garlic found in produce section)

1/2 Lemon – Juiced

1 Teaspoon Dijon Mustard (I used Grey Poupon)

Salt & Pepper


Assemble all ingredients in bowl. Whisk together dressing ingredients. Toss salad & serve.


This salad saves pretty well – the perfect lunch!
