Easy Weeknight Dinner: Portobello Pizza

Sometimes Sundays call for a low key dinner that goes great with a glass of wine. That’s why I was more than happy to settle in early last night with such an easy, healthy, yummy dish. Something about the comfort of pizza paired with the nutritious veggies creates a guilt-free dinner that satisfies even the hungriest of tummies.

Portobello Pizza 1

Ingredients

(with this dish, the fresher the better)

Portobello Mushroom

Marinara Sauce

Fresh Mozzarella

Spinach

Pepperonis

To Make

  1. Pre-heat oven to 375 degrees
  2. Scoop out insides of mushroom to create a bowl for toppings
  3. Layer marinara sauce, sliced mozzarella, spinach & pepperonis
  4. Bake for 15-20 minutes
